Chicken in Aspic (Serves 
2 envelopes Knox Unflavored Gelatin
2 cups cold water, divided
2 cans (10 1/2 ounces) condensed consomme
1/2 teaspoon salt
4 tablespoons lemon juice
2 cups diced bake chicken
1 cup mixed cooked vegetables
1/2 cup chopped celery
4 tablespoons chopped green pepper
4 tablespoons chopped pimiento
Sprinkle gelatine on 1 cup of the cold water in saucepan to soften. Place over low heat, stirring constantly, until gelatine is dissolved. Remove from heat; add remaining cup cold water, condensed consomme, salt and lemon juice. Chill until mixture is the consistency of unbeaten egg white. Fold in diced chicken, mixed cooked vegetables, celery, green pepper and pimiento. Turn into a 6-cup mold or individual molds. Chill until firm. Unmold on crisp spinach greens. Top with toasted almonds. Serve with cranberry sauce.
Savory Vegetable Pie (How to bake by the Ration Book, pg. 21)
1 tablespoon fat
2/3 cup thinly sliced onions
2/3 cup sliced celery
1 2/3 cups cooked vegetables (peas, string beans, and carrots)
3 ½ tablespoons Swans Down Cake Flour
½ teaspoon salt
Dash of pepper
2 tablespoons melted
2 ¾ cups milk and vegetable stock
1 tsp vinegar
1 tsp Worchestershire Sauce
3 hard-cooked eggs, sliced
1 recipe Savory Biscuits (page 12)
Melt fat in skillet, add onions and celery, and cook gently 10 minutes. Add cooked vegetables.
Combine flour, salt, and pepper; add to melted fat in saucepan and blend. Add liquid gradually and cook gently until thickened, stirring constantly. Add the vegetables, vinegar, and Worcestershire sauce. Turn half of mixture into shallow baking dish. Cover with egg slices, sprinkle with salt and pepper, and top with remaining vegetable mixture.
Mix biscuit dough as directed. Drop or place biscuits on vegetable mixture. Bake in hot oven (425 F.) 25 minutes. Serves 4.
